I know.  These ARE NOT HEALTHY.  Sometimes, you have to splurge though and these are my new favorite go to for this Fall.  With a huge crop of apples off my tree in the backyard, I have been scouring the internet for ideas to use them.  I came across several recipes that are similar to this one but as always, like to put my own touches on the recipe to make it my own.

If you were at the Niguma Chakra Yoga class on Saturday, October 19, we had these delicious balls of yummy after class and you know what I’m talking about when I say these are soooo worth a cheat day.  It’s all about balance after all. You will need:

  1. Preheat the oven to 350°F.
  2. Spray a 9 x 13-inch baking pan with Avocado Oil Cooking Spray
  3. Mix apples,  brown sugar and the cinnamon in a medium bowl. Set aside.
  4. Using your hands to flatten each dough ball into a circle about 3 to 4 inches across. You can use a rolling pin or you can pull the dough around the edges like you are making a mini pizza. Add 1 tablespoon of the apple mixture and 8-10 caramel bits.
  5. Carefully pull each side over the center to create a “package,” and then roll the dough into a ball. Be careful to make sure you cannot see through the dough. If you have any tears or can’t seal the dough, tap your fingertips in flour, pinch any tears and roll again.
  6. Put the dough ball in the prepared dish, seam side down. Repeat until all 16 of the apple pie bombs are in the dish. Sprinkle any remaining apple mixture & natural sauce made in your bowl over the apple pie bombs. Bake the bombs for 35 minutes, until the tops are golden brown and they are no longer doughy.
  7. While those bake, put 1/2 cup of Caramel Bits and 1/2 & 1/2 in a microwave-safe bowl and microwave until melted, 30 seconds at a time, stirring after each interval.  It will likely take about 1 minute to 1.25 minutes total. Once you have a smooth mixture, set aside to cool.
  8. Remove the apple pie bombs from the oven and drizzle with the caramel sauce.
  9. Enjoy!
